When using Siri on my Mac, it thinks I am my partner. How do I change the contact information so Siri knows who I am?

You need to select the card you want as your card and use the Card ➙ Make This My Card menu option:
Then Siri will use that card.
Assuming you and your partner aren't on the same contact card. You would set your contact to "Make This My Card" in the Card menu. If you are on the same contact card, make a new one with your info only and set it as your contact card.
