Change between "Time to Stand" and "Time to Roll"

My brother just bought an used Apple Watch. Everything works well but it seems like the Activity app recognizes my brother as a wheelchair user (my brother is a normal user). I can't find a way to change the option from "Time to Roll" to "Time to Stand". Anybody has a way to change it ?
