Can I switch between two Apple Watch's using one iPhone and track my daily exercise time, calories and standing time etc.? Will it show up on both watches when I switch between the watch I currently wear?

Yes - and activity information will update automatically when you switch between wearing them.
Note that only one watch can be active at any given time.
