I would like to upgrade to El Capitan from Yosemite, but the App store is only offering Sierra, which is far too new for my taste. I did find one link, but because I am running above Snow Leopard, and my computer is capable of running Sierra, the App store wouldn't download the software.

You need to go to a computer where you would be able to use the link you found, download the installer, and move it to yours.

Since the release of Sierra, El Capitan is no longer available for an upgrade. If you want to use an earlier version of OS X, then you will need to take your computer to an Apple Store where they can upgrade it for you.
Im kinda in the same boat but I currently have snow leopard & would like to upgrade to el capitan but its not available on the app store :/
