My iPhone 6s has been stolen and the thief switched it off till now and i can't locate it by find my iPhone app,
My question is if some how the thief succeed to jailbreak it could he access my data on the phone like my photos and messages? and dose my iPhone still appear on my iCloud account and appear as offline or it will be deleted?

On the issue on whether the thief can jailbreak it, it's really difficult to say. I would say the odds of him/her doing so is slim as their intentions, I am assuming, is to probably turn it around and sell it immediately.
