How do I sign out of a Mail account??

I use Mail on MacBook Pro 2009 running Mountain Lion. I need to sign out of Gmail account so I can create a second Gmail account. Also need to sign out of another Mail account, with ATT/Yahoo. I can't find a way to do it via the Mail application.
