When I text my daughter from my iPhone 6 to her Samsung phone, same carrier, my English text is turned into Chinese charactors on her phone. I've checked all setting. It started this week just before the update and continued after the update.

I'm going to make this even better. I have the same issue with texting my wife. I have an iPhone 7 Plus, she has an HTC M8 running Windows phone. So I don't think this is a Samsung issue. We do both have AT&T wireless but I do not believe this is the cause. It appears to be the iPhone messaging.
When you type messages on the iPhone sometimes words get highlighted in the text. This allows you to click on them and substitute an emoji. Those texts are the ones that become Chinese. You don't have to include the emoji, just have the iPhone offer to change it. the word turns orange on my phone. Send it out, and the text is unreadable on the other end.
I have to figure out how to turn it off until it get fixed. It seems to be an Apple issue.

Do they show in Chinese on your phone as well as hers, or only on hers, or only on yours? Do they show in Chinese for anybody else that you send to? Has anything else changed, e.g. has she moved her number from an iPhone to a Samsung? Double check regional settings on both devices. Reboot both devices.

I also found a setting on my iPhone under Messages. "Send as SMS" It was off, I have turned it on. So the iPhone will send messages as SMS if messaging is not available. I don't know if this will help, but it is worth a try.
What happens if you text other people?

I texted my sister on her iPhone and she received it normally.
Do you know anyone with a basic phone or another Samsung that you test for comparison. Perhaps it is your daughter's phone or carrier that has the problem.

Shows normal characters on my end. She's had a Samsung phone for years.
The only other person I texted was my sister who also has an iPhone with
AT&T as her carrier.
I'd be inclined to think the problem might be at her end, or with the carrier. I think you'll need to gather more data. She might need Samsung's help forums, or the aid of her carrier.

Same thing has happened to me the past two days when texting my sister who has a Samsung and my husband with a Motorola. No one else has received texts like that from me-just those two.
