English text turns into Chinese characters

When I text my daughter from my iPhone 6 to her Samsung phone, same carrier, my English text is turned into Chinese charactors on her phone. I've checked all setting. It started this week just before the update and continued after the update.

iPhone 4S, iOS 7.0.1

I'm going to make this even better. I have the same issue with texting my wife. I have an iPhone 7 Plus, she has an HTC M8 running Windows phone. So I don't think this is a Samsung issue. We do both have AT&T wireless but I do not believe this is the cause. It appears to be the iPhone messaging.


When you type messages on the iPhone sometimes words get highlighted in the text. This allows you to click on them and substitute an emoji. Those texts are the ones that become Chinese. You don't have to include the emoji, just have the iPhone offer to change it. the word turns orange on my phone. Send it out, and the text is unreadable on the other end.


I have to figure out how to turn it off until it get fixed. It seems to be an Apple issue.
