Can I adjust the thickness of my Apple Pencil in Notes on my iPad Pro?
wwould like to adjust the thickness of my Apple Pencil when I write in Notes on my iPad Pro.

Not possible in the Apple Notes app due to limited line drawing widths.
It's not the Apple Pencil that adjusts line widths, but what line widths that are available in the app.
If you need an app that has more flexibility for note taking, I would look at the many notes apps available in the iOS App Store.
