iPhone 7 (and iPhone 7 Plus) features a wide colour display (P3), whereas iPhone 6 features a full sRGB standard display.
Apple describes the wide colour display as follows:

More shades of the color spectrum can be used to create an image, meaning that what you see on the screen is a truer representation of the world. In addition to Jonathan's reply you may also just simply have 'night shift' on.
Swipe up from the bottom of the locked screen and turn if off.

the night shift was my first thought, so I check this immediately and it is OFF.
