The following steps should resolve general issues with syncing or non-hardware issues on a device caused by corrupted firmware or settings. They assume that all of the content you want on the device is in your library ready for restoring. If it isn't see Recover your iTunes library from your iPod or iOS device first. I would also recommend you copy everything out of the camera roll if you haven't already.
- Backup device.
- Restore as a new device.
- Restore the backup you made earlier.
Use an encrypted backup if you want to preserve passwords, wi-fi settings, web history and health & homekit data where appropriate.
Problem 2
Previous advice should have fixed any issue cause be firmware, although perhaps more likely a hardware issue. Try new headphones.

The steps in the second box are a guide to removing everything related to iTunes and then rebuilding it which is often a good starting point unless the symptoms indicate a more specific approach. Try the Microsoft Program Install and Uninstall tool mentioned in note 1. This may clear the remnants of the old installation.
The further information area has direct links to the current and recent builds in case you have problems downloading, need to revert to an older version, or want to try the iTunes for Windows (64-bit - for older video cards) release as a workaround for performance issues, or for compatibility with third party software on 64-bit systems.

Your library should be unaffected by these steps but there are links to backup and recovery advice elsewhere in the user tip.
You might want to try this before addressing problem 1 if iTunes isn't stable right now.
