Q: Setting iCloud options of Desktop and Documents Folders
In the Finder "System Preferences" > iCloud Drive > Options:
How do I set the iCloud backup options of the "Desktop and Documents Folders" to limit it to just backup my Desktop and not backup up any other Folders?

With the new macOS Sierra, it doesn't work that way. It's designed to work where, if checked, it backs up (or makes copies) of all your files to the 'Desktop & Documents folder'.
