Only certain devices are required to be connected to power for Hey Siri to work. They all require connection to the internet.

Excerpt from Use Siri on your iPhone, iPad, or iPod touch - Apple Support

Say, "Hey Siri"

Plug your device into power and say, “Hey Siri.” Then ask your question.

With iPhone 7, iPhone 7 Plus, iPhone 6s, iPhone 6s Plus, iPhone SE, and iPad Pro (9.7-inch) you can use “Hey Siri” without plugging into power. Learn more about "Hey Siri,"like how to set up the feature.

The iPhone 6 Plus, as indicated in your profile, requires that it be connected to power.

Was it the update?

No.

As ChrisJ4203 mentioned above, the iPhone 6+ has always required power to say "Hey Siri." If you have one of the other model iPhones ChrisJ4203 listed for you, then you don't need power now, and you didn't need power before the update. There has been no change to this, other than adding new iPhone models (iPhone 7, iPhone 7+) that did not exist previously.

Here is one possibility.

Might you actually have an iPhone 6S+? Those were released "last September" (Sept., 2015) and do not require being plugged in to use "Hey Siri".

If, for example, you have an iPhone 6S+, and have recently turned on Low Power Mode on your iPhone, then indeed "Hey Siri" would have formerly worked without requiring being plugged in but now, Low Power Mode would require you plug in the device to use it.

You may have been holding down the Home button to invoke Siri when you were out and about.

The reason for the plugged in power requirements on the 6/6+ or older models, is that this "always listening" feature would use too much battery to be active all the time. The newer models (6s/6s+/7/7+,SE) have a dedicated low power chip that, while still using power listening constantly for "Hey Siri", use much less power doing so (similar to the Android Moto X and always listening for "Hey Google" vs. using that feature on other Android phones at the time which did not have a dedicated low power chip).
