Q: Why does iOS call days "yesterday" or "today" ?

iOS refers to days as "yesterday" & "today" rather than using the weekday name like "Tuesday". Is there any reason this is the place? Where could I change it so that it refers to the day of the week at all times and no longer these abbreviations ?

You cannot change that behavior as it is coded into iOS and is not user changeable. You can send feedback to Apple about it at http://www.apple.com/feedback/

As an experiment, log in to the web portal of your e-mail server. What does it show? Mine shows the "time" for mail received today or "day" for the mail received yesterday.
