How do I disable the people face matching in Photos? I don't want Apple searching my photos for faces. Is the only options not to store photos on an iDevice or switching to another device from another company?

You can't disable/remove the album, if you go into the People album it will start scanning your photos. You could try leaving feedback to Apple about it : http://www.apple.com/feedback/ipad.html
In the meantime you could use a third-party app for your photos and move them into that from the Photos app
