Why does my watch face keep changing?
MY Apple watch 2 watch face keeps changing without me doing it. I later need to go in manually and change it back. Anyone know why?

Swiping edge to edge across the watch face switches between different watch faces that have been added to the collection on your Apple Watch.
If you tend to only use one watch face, you may find it most convenient to remove any others from the collection on your watch, so that accidental swipes across the screen no longer select a different one.
Watch faces can be added back as and when desired, either directly on your watch or via the Watch app on your iPhone:

That really doesn't answer the question. It happens to me all the time, and i'm not accidentally swiping across my watch face.
The faces on both my husband and my Apple 2 Watch changes way too easily.
On the other hand, it is now much easier to change the watch face. Previously it took so long to switch to a different watch face that I rarely used it. Now it is so easy to switch between two different watch faces with different complications that I rarely need to use the Dock and to launch apps from the Dock. It is very convenient - as long as the watch face does not change on its own.
How about a watch face changing overnight when on the charger? I can take the watch off with my chosen face, put it on the charger, and put it on in the morning to discover it changed. It never used to do this. Probably has become a consistent problem in the last three months. It's a pain!
Are you using Watch OS 3? If you accidentally swipe from the left or right margin of the screen, like previously to view the glances, the watch face will change. Perhaps your sleeve is doing this swiping.

The question on what is happening was answered, unfortunately the question why Apple would decide to have a "swipe" change watch faces still remains completely shaded in gray.

The faces on both my husband and my Apple 2 Watch changes way too easily. There should be a way to "lock" it in place. It is just an irritant, more to my husband than me.
Be sure to submit your feedback to Apple.
It's probably accidential. Happens to me. Sometimes opens timer on me as well. It's just sensitive. I had to use different face.
