I know that they have optical sensors and a motion accelerometer to detect when they’re in your ears but what does that mean? Is there an optical red light that shines against your ear lobe?

All it would take is the accelerometer to determine that each one is in the proper position to fit in the ear. If you can wait until they are released http://www.ifixit.com will do a teardown and be able to determine how it works.
That makes about as much sense as a football bat.

without having checked up on it then it would make more sense to put it on the side so it would be lightning into the side of your ear channel would mean less likely interference
