I have an iPhone 5s and when I turned it on, it came up with the Activation Lock screen. I have no SIM installed, so I couldn't log in with the iCloud account. When I do insert a SIM, will all my contacts, messages, apps, etc. be erased because of Activation Lock?

Activation Lock can wipe the phone however you will be able to restore your data from the most recent backup in either iTunes or iCloud.
If you're able to connect the iPhone to a computer with iTunes installed you can activate it without a SIM to check it.
If the phone is displaying the Activation Lock screen, it's already been erased.
You will only see the Activation lock screen during the setup assistant. The setup assistant only runs when a device has been restored/erased in iTunes, erased via settings or is brand new.
