Profile Manager tasks pending after Server 5.2?

This is my first post on the community & I am by no means an expert in the way of OS X Server/Profile Manager so please be gentle!

We have a Mac Mini running OS X Server - which has been running Profile Manager to deploy apps to 6 Pupil iPads & 9 Teacher iPads for over 12 months with no issues. As an example, we renewed Certificates for OS X Server on 12th September this year (3/4 days before they were due to expire). A short time after this, we updated macOS Server up to version 5.2 - and after this we have ran into issues with any task attempted through Profile Manager getting stuck at 'Pending' status for all iPads (e.g. push apps, get info).

I have had a quick look through some of the logs but to be honest I'm not sure what I'm looking for?
