How do I get directions between two arbitrary points in Apple Maps on iOS 10?

I'd like to get directions from one point to another in Apple Maps on iOS 10 (10.1.1), neither of which is my current location. I have been unable to figure out how to do this. I can get to the Change Route dialog, but there is no pick list except for some odd list of recent places. If I pick one of them, then I get directions from my current location to that place.

This is a pretty common use case, and there ought to be a way to do it. I can figure out most things on my iPhone (at least in the Apple apps), but this one has me stumped.

iPhone 6s, iOS 10.1.1

Type in the place you wish to go to and go to the directions panel. The "my location" should be blue - tap on that, and edit the "from" location to be whatever you wish and update the directions. Now pick or change your route amongst the new ones offered to and from your two locations.
