Does apple watch track steps , climbing stairs automatically like fitbit or I have to start a activity ??

The Apple watch does count steps without starting an Activity.
The Activity.app is running in the background and tracking the steps using the motion sensor. As lllaass said, you do not need to run a workout for this. But the specific workout apps will help to get a more precise estimate of the calorie burns, if you are doing a workout.
So what other activities does Apple watch tracks automatically without me starting an activity as I take micture of bootcamp and cycling classes so making sure this can track what I am looking for .
At the moment I am using fitbit and its not that accurate for tracking steps and activities .
The Activity app included indoor and outdoor cycling activities. It also includes an "other" for an activity that is not specifically listed.
When you select an Activity, the app uses heart rate and can use motion as detected by your watch arm movement to calculate calories.
Thanks but will the watch also track any activity automatically by me without starting activity in the watch.
For example if I start lifting weights and doing jumping jacks do I have start an activity!!! for it show up in the health app.
At the moment I use fitbit and after few minutes of physical activity it automatically starts tracking that activity ..

Activity.app will count the steps, estimate a distance, and you will see the values for the steps, distance, calories increase in health.app, as longn as Activity notices you are moving. It is automatic.
But Activity will not recognize the type of the workout and file it as a separate workout, e.g. running. If you want a workout listed in the Health.app you have to start a workout app.
