I'm also facing same signal issue. Already updated my iPhone 7 plus to higher IOS version but ther is no luck .
It is always displaying 3G sign but if I connect the same sim with Samsung S6 I'm getting full 4G strength.

Since several days, I am effected with this too. What I noticed is that, once in a while the Mobile looses the Cellular lock. This even happens while the signal better than -85dbm. (I enabled the numbers instead of dots). But my device is not a UK model.
Hope someone can shed some light on this.

Make sure that your device is compatible with LTE. Go to Settings > Cellular > Enable LTE. Identify your iPhoneand compare its model number with the list of supported LTE carriers for your country or location. Or identify your iPad and compare its model number with the list of supported LTE carriers for your country location. LTE options might vary depending on your carrier's network.
In some countries, you might see Mobile instead of Cellular. For example, you might see Settings > Mobile or Settings > Mobile > Mobile Data Network instead of Settings > Cellular or Settings > Cellular > Cellular Data Network.
