If the projector does not show under Display Preferences then no mirroring option will show since there is nothing to mirror to.
Try the following but it could be a bad mini displayport>VGA adapter. I have had a few of those go bad or not even work initially.
- Try resetting the SMC and NVRAM/PRAM

- Try starting in Safe Mode

Does the projector show in Display Preferences?

yes on my tv with hdmi
whats weird is that there appears to be no mirroring in system preferences
