how to remove encryption option without password

Is there any way to remove the encryption option to back up your iphone to your mac/cloud, etc.. when you can no longer remember a password

The only option is to delete the encrypted backup and restore the iPhone to factory. You cannot use your existing backup to restore the device because it contains the password. As I understand it (correct me if I'm wrong) the encryption password applies only to you iTunes backup (on your Mac in this case). You should still be able to restore from your iCloud backup. See the last paragraph in the "If you can’t remember the password for your encrypted backup" section in the link ChrisJ4203 cited.
