Hi,
When I tried to update iTunes today I got the following:
'Updating to iOS 10.1.1 requires at least 610 MB of free space on your iPhone. Please change your media sync options to make more storage available.'
But I'm not told how to do it or where to go. I have no idea what media sync is.

If I may understand you correctly you wish to sync your iOS device through iTunes and seems like the available storage won't let you complete the process. I would be so frustrated if I had to update my iPhone and experience a problem like this. Well there is a workaround option that you can resolve this by deleting some Apps that are consuming unnecessary space. So it will be a manual thing basically checking which Apps you need to delete and eventually the update process becomes easy. https://support.apple.com/en-ca/HT204204 . Might also need to check on how to view storage through iTunes as shown on below.
