Hi

Yes - outdoor cycling workouts can be recorded using Apple Watch Series 1 without taking your iPhone along.

As Apple Watch Series 1 models do not have built-in GPS, taking your iPhone along (with Location Services and Bluetooth enabled) would enable the Workout app to estimate speed and distance and also to include a route map in your workout results (accessed on your iPhone via the Activity app > Workouts (tab) after your workout) using the iPhone's Location Services capabilities (including GPS).

Apple Watch Series 2 has built-in GPS, so can use location data to estimate results (distance, speed, route mapping, etc) for outdoor workouts without needing access to the paired iPhone.

When estimating active calories burned, either watch model will take your heart rate (measured by the built-in heart rate sensor) into account, using a calculation tailored for outdoor cycling.
