There are ways to transfer photos and documents from an older iPad to a Mac, but it depends on the type of document you wish to transfer, and no it will not be AirDrop as the iPad 2 cannot do Airdrop due to its age.
For Photos, Transfer LITE works well

Or something like FilePro Mini may work for other types of files

It will depend on the type of the document you want to Air Drop. There needs to be an app on your iPad that can open the document.
iOS 7 is not enough for Air Drop. You need one of the devices listed in this document:

To share content with AirDrop, both people need one of these devices using iOS 7 or later, or a Mac with OS X Yosemite or later:
- iPhone 5 or later
- iPad Pro
- iPad (4th generation) or later
- iPad mini or later
- iPod touch (5th generation) or later
You also need to turn on Wi-Fi and Bluetooth. If you want to share with your contacts, sign in to iCloud.

So if I have an iPad 2 from 3 years ago I'm stuck?

Yes, the iPad needs to support Air Drop. If a device supports AirDrop, you will see it in the Control Center.
According to the Apple support article - you can contact Apple Support or you local apple Store to see if there is something else

Unfortunately, when I tried to Airdrop a bunch of photos from my Mac my iPad said I needed an app.
