what steps do I take to change my Apple ID on all my devices?

Change how/where ? If you want to log out of an account :
- for the stores tap on the id in Settings > iTunes & App Store (anything downloaded by an account is permanently tied to that account)
- iCloud, tap on Settings > iCloud > Sign Out
- FaceTime, tap on the id in Settings > FaceTime
- messages, tap on the id in Settings > Messages > Send & Receive
And you can then log in with a different account
