I am about to instal windows 10 using boot camp. The BC assistant guide recommends having "at least 55 GB of free space on an internal hard drive." Should I increase that to 65 or 75 GB? What happens if I need to install other "windows software"? Would the new software be installed on the windows partition or use the space on my mac hard drive?

There is not such thing. Whatever size you need for Win10 and all your software. Could be 30GBs or 300GBs.
My recommendation is minimum of 100GB then if you expect to install many programs or have a lot of data make it larger that 100GB. Windows uses the Windows partition mot the OSX partition.
How big is your internal disk? If you can, split the disk in half each for OS X and Windows. Windows creates large system files based on the hardware configuration.

Yes. I will usually install only the Windows OS on the internal partition, which becomes C:. If you have USB3/Thunderbolt external drive, format it as NTFS when booted in Windows and use it a D:. Slower USB2 can cause performance issues.
