I want to insert the section symbol into a Pages document. I have gone to Edit --> Emoji and Symbols, but the section symbol doesn't appear to be listed. Any suggestions?

I have found the section symbol at Option - 6. I would like to remap it to Option - s. Is there a way to do that? Text substitutions says I have to have two letters.
In System Preferences : Keyboard : Text, use the following for the replace/with pair:
I would not remap it, because there is another valid character at at option s, the German doppel s = ß.
It always pays to stay with standard implementations, even though you think fiddling with will more suit you will have to use other set-ups and it will be broken for you all over agin.
If you really want to go ahead with this you need to create your own keyboard and switch to that as you type, or just as conveniently use a two letter shortcut for substitution eg #s
