Can I choose what to backup on my phone?
Is it possible to choose what you want to backup on iCloud? I would like to eliminate the backup of photos.

Yes.
Go to Settings > General > Storage & iCloud Usage.
Tap on "Manage Storage."
Tap on your device name.
Under "Choose data to back up," turn off Photo Library.
