I recently purchased a used iMac and have migrated from my MacBook Pro to it as my primary computer.
I am having some issues with iTunes, and as a FYI, I've already deleted (via sudo terminal command) and reinstalled iTunes.
Certain options are "greyed out":

To anyone with this same question, I appear to have stumbled across the answer.
Go to iTunes Preferences --> then to General. There's an item called "list view checkboxes". Not intuitively named, select this and you will once again be able to "check" and "uncheck" a song or album.

Do you have iCloud Music Library and/or Apple Music switched on (in iTunes > Preferences > General)? These settings will override manual syncing, and instead your entire library will be accessible from your other devices. You choose what content to sync on the remote device itself.

Thanks for the fast reply. That doesn't seem to change it -- and, note that the ability to click to do a 'manual' backup is also grayed out (one would assume that is unrelated to the Music Library and Apple Music).
I also noticed that if I right-click on a song, there is no longer an option to "check" or "uncheck" an individual song or a whole album.
