I'm just amazed a he fact that apple is developing face recognition but still hasn't fixed the basics. Why should I have to share files or photos across all devices (not safe) to be able to easily download them on my mac? I've spent over two hours trying to transfer a specific folder from my iPhone to my Mac.

Cannot understand why I can't quickly access any folder using my Mac unless it's shared to begin with.

There are a number of possibilities and what is best may vary depending on your requirements. Your post says macOS Sierra but your signature says Mountain Lion. I'm going to base the answer on macOS Sierra.

One of the easiest is to use iCloud Photo Library. With that, all of your photos will be on your phone, on your Mac and also viewable at iCloud.com. It is completely automatic once turned on. To turn it on in your Mac, go to Apple menu > System Preferences > iCloud > Options and put a check mark in front of iCloud Photo Library. On your phone go to Settings > iCloud > Photos > and turn iCloud Photo Library on (and you may also want to turn on Optimize iPhone Storage on that same screen to reduce the storage space required on your phone.
