Set up without internet?
I read that one can use a computer & iTunes to set up a new iPhone - even if there is no internet connection & no active sim on hand.
Can anyone here confirm?

No, that is not possible. To activate an iPhone it must have a SIM in it and it must have an internet connection to clear the check for activation lock and sign in to Apple's activation servers. If using iTunes, then the computer running iTunes must have an internet connection.
