delete text in a pdf document
After I scan a document into my iMac with Sierra is it possible to delete text and replace it with different text?

Only if you have software that is capable of editing PDF files. The Mac does not come with such software. If you do a Google search for 'PDF text editor' you will find a bunch of them.
