Is there any combination of an iPhone, Apple Watch and bluetooth headphones which provides communication option by bluetooth headphones instead of forced default Apple Watch speakerphone in case of making of outgoing calls. I'd like to emphasize that question is strictly directed on outgoing calls, incoming calls makes no problem at all.

If you are initiating the call from the watch, you would need to unlock the phone to change the audio source. There is nothing on the watch you can use to change it. I'm guessing the Bluetooth headset it connected to the phone rather than the watch?

It makes no difference in that sense whether you connect BT headsets with a phone or a watch.
Option of initaiting call or changing audio source by phone is obvious, but by that mean Apple didn't provide full handling of phone calls by watch, which would be one of its essential purpose.
