To turn off Water Lock, keep turning the Digital Crown (the round button) until the water droplet fills the circle and your Apple Watch states Unlocked (you may also hear the speaker make sounds).
If you experience any difficulties with doing so, then it may help to turn the Digital Crown more quickly:
One thing to add to Jonathan UK's response is you need to slowly turn the crown to fill the circle. If you keep turning the crown too fast it won't fill the entire circle.

When I lock my watch during workouts it sometimes gets so locked that turning the digital crown will not release and unlock it. Why does this happen and how do I prevent that? I have to lock my watch during boxing and pushups or it will keep hitting buttons and lose my workout.
