I've had this issue for three weeks now. Today, I think I finally was able to figure it out. What helped me was I set my contacts phone number as "home" instead of "mobile". Now my contacts name is showing on my watch instead of just their numbers. Hope that helps.

It may help to follow these steps:
On your iPhone, in the Contacts app, check that there is a single contact card for each of your contacts and that each card contains that contact's full name and phone number.
On your iPhone, in the Watch app, go to: My Watch > General > Reset > tap once on Reset Sync Data.
Had the same issue on and off figured out if you just Unpair your Apple Watch from your iphone and repaire and all your contacts show back up for your messages. Thank Apple for nothing pointless to contact them all they want you to do is come into their store to buy more things!

This does not work.
My contact names Donnie show up. Only numbers in every instance calls texts etc.
This renders the watch useless for any type of communication with the phone /watch
