Hi

It is not possible to manually add credit at your preferred levels to both the Move and Exercise rings on Apple Watch in respect of any workouts during which you forgot to wear your watch.

Third-party apps

Some third-party apps offer the ability to receive Move credit in the Activity app, for an amount of active calories of your choice, for workouts that you forgot to record via the Workout app on your watch. However, they are not able to add Exercise credit, due to programming / API limitations.

Examples that you may wish to consider include:

Fitmanual

Manual Move

Add data manually

Workouts can also be added manually to the Health app on your iPhone.

The Health app aggregates all health and activity data from your watch, iPhone and any other sources. However, note that this will not credit either Active Calories or Exercise to the Activity app on your watch.

To add a workout, go to: Health Data (tab) > Activity > tap on Workouts > tap on the "+" sign (upper-right) > enter your workout data.

Record a fresh workout on your watch

Another option is to record a fresh workout using "Other" as the activity type. This will award one minute of Exercise credit for each full minute of the workout. Active calories, however, will only be estimated at a rate equivalent to either a brisk walk or based on data recorded by the heart rate sensor, whichever is higher.
