how do I save stuff on the Macintosh HD instead of iCloud?

So I recently bought a MacBook Pro with the Touchbar. I owned a Mac before and I didnt have this 'problem' yet. So every time I put new folders on the desktop it also appeares in the iCloud Drive. And I only have the 5GB storage on that and its already full. Since I dont need any of my documents or iTunes music in the cloud i just want them to save on the Macintosh HD? So could you help me with that? How do I just save my Dokuments and Music only on the hard drive? I wouldn't like to use iCloud.
