Converting PDF text to Spoken Text iTunes File

Mac OS used to have an option where you could convert a PDF text file into spoken text. It was native to the software and essentially the process was to select all in a PDF document (it only works with a PDF not Word), then you would Control + Click or “Right Click” and in the options would be an option to convert to iTunes. It would then convert the text and add it to your iTunes library as a spoken text as a file. I no longer see this option with the OS update. Does anyone know how to accomplish this now?
