Why double click for unlocking?

Why? Because Apple changed it. Beyond that, no one here would know. It probably has something to do with the fact that people have been complaining about slide to unlock for years.

There is one setting change that may help, at least when you're using TouchID. Settings>General>Accessibility>Home Button>Rest Finger to Open>On

I don't seem to have to double tap but, it could be because I've changed that setting.

The very short answer is no, you can not unlock the phone with the slide to unlock feature anymore. Use the feedback link that razmee209 provided and let Apple know that you would like to see the feature added back.

If you use the fingerprint recognition, there is no need to double click. Click the home button once and leave your finger there for a fraction of a second, and the screen unlocks.

You only need double click if you use only a passcode and need to get to the passcode entry screen.

The change was an Apple internal decision, so nobody here can provide any answer as to "why".
