All you do is click on the info button at the top left of the group chat and go to the person you would like to remove and swipe left on the person and click the minus sign and thats how you do it.
Removing people from group messages is only supported in iMessage conversations with three or more other contacts: Send a group message on your iPhone, iPad, or iPod touch - Apple Support

As noted by OriginalName022 above, you can only delete people from iMessage (blue) conversations. It does not work for SMS message (green) conversations.
