I had this too on my iPhone 6s. (Devices greyed out)
My Setup: Windows 10 x64 and iPhone 6s
All options in File > Devices > ... were greyed out. I un-installed and re-installed iTunes several times but same issued occurred. I've literally this minute just managed to fix it.
On my laptop, In Device Manager (start > run > devmgmt.msc > right click "Run As Administrator)) Opens Computer Management Window.. (I did not have "Apple Mobile Device USB Driver" listed under Universal Serial Bus Controllers)
Please NOTE: You "may" loose your previous backups, if you had any. (I didn't, but worth noting just incase)
Steps I took to fix my issue.
Disconnect iPhone.
Un-install iTunes (Add/Remove Programs)
Un-install iCloud (Add/Remove Programs)
Un-install Apple Mobile Device Support (Add/Remove Programs)
Reboot (don't skip this part)
Log back in.
Browse to C:\Program Files\Common Files\Apple\.. and delete all 3 folders (if they exist).
I had Apple Application Support, CoreFP and Mobile Device Support. And then delete the Apple folder itself.
Reboot
Download the latest version of iTunes (for me it was from apple.com/UK/iTunes/download)
Re-install.
Re-connected my iPhone
iTunes auto launched and I could now see my iPhone in the list and all 4 options were now available to me.
Re-checked Device Manager on my laptop, In Device Manager (start > run > devmgmt.msc > right click "Run As Administrator)) Opens Computer Management Window..
I know have the "Apple Mobile Device USB Driver" listed under Universal Serial Bus Controllers.
Hope this info helps some of you.
Make sure to unlock your device before connecting it to USB. See also iOS device not showing in iTunes for Windows.
