How do I export an unmodified raw file from photo to my Mac desktop?

Select the photos in the browser in Photos, then use the command "File > Export > Export unmodified Originals".
If you want to save the metadata as well, enable the option "Export IPTC as XMP" in the Export panel.
This will create a sidecar file with the metadata.

Yes, the files with the extension ".CR2" are RAW files from a Canon camera.
For the Panasonic Cameras the extensions would be ".RW2", or for Nikon cameras ".NEF".
