It isn't that it is not waking up, because I can swipe to the right and get the screen that lets me end the workout or pause it. It's just that the screen is black (except for the two dots that indicates I'm in one of two screens), instead of showing me stats like heart rate and distance. It used to show those stats, but now the last several times I've worked out, during the middle of the workout it's a blank screen.

Check the metrics settings in the Watch App on your phone. When you pick each workout you can set what metrics the Watch will display.
Go to Watch App on phone/Workout/Workout view/ multiple metric/ top right you will see the "edit" button.
It goes dark, but it should comes back on when you tap it. Did you turn off raise to wake? Plus, think of the battery burn if it stays on the whole time
Is it just sleeping to quick? You can change the sleep time from 15sec to 70 sec in the settings under "wake screen" on the Watch.
Why does the Apple watch screen go black in workout mode? It didn't used to do that...I like to see my distance and heartrate.
