I think my ex may have hacked my phone. Is this possible with iPhones?

Generally, unless your ex has had physical access to your iPhone for an extended period of time, more than an hour, your iPhone is unlikely to be hacked. There is no known way to remotely hack an iPhone.
If your Ex does have your Apple ID and Password, the first thing to do is to change your password. You can go to http://appleid.apple.com to do so.
If your Ex does have your password, then yes they can access messages, mail etc... but that is different to hacking the iPhone.
