Hey,
I am using German language on my iPhone 7 and Apple Watch 42mm Series 1 Sport.
Siri however works in German, but apps like for instance maps or whatsapp only accept english language when you use the dictate function- even though they run in German!
I have no idea whats wrong here and need help please.

To change the language for a conversation in a messaging app (including Messages), tap on Reply, press firmly on the display and select Choose Language. The default language for any given reply is the same as the currently selected keyboard language for that conversation within that app on your iPhone.
