You , must not use esc button to close the mail , the right way to close an application is right click on mail icon ( that must be in the dock or in the applications and quit or take your cursor on top menu bar , click on mail > quit mail .
Command + W is for closing the window , if you do in this manner the mail application will not quit completely .
You can do an experiment open calendar , and press command + W the window of calendar will be closed but the app is still in the dock .
Because many people have either grown up with the Windows e-mail solution of ESC, or have to use Windows at work - hence, it's a natural instinct to press ESC.
Keyboard shortcuts should be able to address these types of issues around personal working preferences but it seemingly won't work for this.
Escape does not close a regular window in Windows...

What's wrong with command-W?
Escape is used to, er.... escape from "modal" situations; in particular, if you are editing a keyboard shortcut, you can press escape to get out of that. So "escape" is a special key that you cannot assign to something else. You can use option-escape, or command-escape, though.
You are talking about closing a window - command-W is the universal keyboard shortcut for that, so it seems to me this, if possible, would create a rather unusual experience.

Maybe the program you are using shows you messages in some kind of popup window (something like when you use QuickLook in the Finder - these CAN be closed by pressing escape).
Mail opens each message in a "normal" window (you know, with a red, yellow and green dot). These windows are never closed by hitting escape. I don't think it can be made to work that way by us users. Apple could program it in any way they choose, and if you feel there is functionality that should be there, use feedback for it.
No,
How about via creating a shortcut?
I've tried to create a shortcut but can't seem to apply the ESC key nor any Mail tasks.
Can anybody help?
