Yes. Just highlight them in iTunes and drag-n-drop them to the thumb drive.
iTunes purchased songs are in AAC format. If you plan to use them in some other player, make sure it can handle AAC format. Most can, but some require MP3 format. If needed, you can create MP3 versions before doing the copy, per this guide:
