I have Sierra on an iMac.
I have a binder full of home movies.
I have a WD external hard drive that is storing all of my still photos - and works great with my Mac.
How do I copy my home movies from the DVD-R disks to the hard drive in order to get rid of my binder full of disks? I can't find anything online.

If those are video DVDs one option is to create a disk image of the video DVD so that you can mount and play that disk image with DVD Player at any time. If you want to extract the movie(s) out of the video DVDs then you can do so from the disk image.
If by "home movies" you really mean ones you made yourself, drag the files from the DVD to the drive.
If you mean commercially produced movies, almost without exception you cannot legally transfer those to a different medium.
You will need some converter (such as MPEG Streamclip - free) to get your movies from a DVD readable format back to a computer/hard drive/movie player app readable format. Those converters also only work with homemade movies (no copyright or DRM issues).
You don't have to use MPEG Streamclip. If you drag the Video_TS folder to VLC it will play it as a normal DVD, just off your computer.

That is really strange. VLC will play anything you throw at it. I also use it to copy DVDs to the HD.

Yes, I thought it was; however, I rarely watch a DVD on the computer (preferring my large screen TV) - I really only need it when I'm either importing it to burn again or some other "work" process, so i never bothered to check into the problem since MPEG Streamclip does what I need it to do.
It depends if you want to maintain it as a "virtual DVD" or
you just want the movie content.
If you just want the movie content, a free app called Handbrake (https://handbrake.fr)
can pull the movie off the DVD and transcode it to a variety of formats. It may look
initially somewhat daunting, but it has a lot of ready to go presets to covert things
for various devices and quality levels.
That's great to hear - VLC has never worked for me in any OS version (but MPEG Streamclip always has - I've used it just to play or convert).
